hmmmm, the most surprising thing I learned...Susan, <br />hmmmm, the most surprising thing I learned? Would have to be that I ate things I thought I never would eat. That I can try them and I might be thinking I won't like it because of the individual ingredients, but when all mixed together and tossed in the various dressings, or toppings (honey, etc) it actually tastes good. For example, Kale with honey on it, and raisins, you knead the honey into the kale and let it sit for a few minutes to soak in....I thought no way....but it was yummy. And the honey tempers the kale a bit. Also, putting broccoli and apples in a salad together? not too bad. <br />my favorite take away of the whole thing? The friendship i created with my hosts, Ben and Janis. <br />I hope you get this answer.
